Baked German Potato Pancakes (Kartoffelpuffer)

Ingredients

  • 1 onion

  • 2 lb. potatoes (gold/yellow, red)

  • 2 eggs

  • 1 Tbsp. flour, if needed

  • Salt & pepper, to taste

  • Cooking spray

  • Applesauce, optional

Cooking Steps

Prep Ingredients

Preheat the oven to 350°F (180°C). Peel and finely slice 1 onion.

Peel and coarsely grate 2 lb potatoes. Squeeze grated potatoes well with hands or cheesecloth. 

Combine ingredients

Beat 2 eggs and mix with onions and potatoes. *If the dough is too liquidy, add 1 Tbsp. flour. Season with salt and pepper, to taste. 

Bake 

Shape the dough into puffs and spray each with baking spray. Bake for 30-40 minutes. Serve with applesauce, optional.
