Bok Choy Soup- 4 Ingredients

Ingredients
1 onion
1 lb (450g) baby bok choy
3 cups vegetable broth
1 Tbsp olive oil
Salt & pepper, to taste
Cooking Steps
Saute
Roughly dice 1 onion. Rinse and slice 1 lb (450g) of baby bok choy into about ½ in. (1.5 cm) pieces, making sure to trim the stalks. Separate the leaves and stems.
To a pot over medium heat, add 1 Tbsp. olive oil. Once oil shimmers, add in diced onion and cook until lightly browned about 4-5 min. Then add in sliced stems. Cook until softened, about 4 min.
Finish Soup
To the vegetables, add 3 cups of vegetable broth and bring to a boil over high heat. Season with salt and pepper, to taste.
Once boiling, turn down the heat and simmer for about 8-10 min. Remove from heat. Add in bok choy leaves and stir until wilted and combined. Ladle into serving bowls once finished!
