Creamy Spinach Potatoes

Ingredients
5oz spinach, rinsed
5-6 new potatoes, peeled and rinsed
1/3-1/2 cup sour cream or Greek yogurt
1 medium sized onion, diced
1 clove of garlic, minced
2 Tbsp. olive oil
Salt & pepper
Optional: 1 tsp Cayenne Pepper
Cooking Steps
Prep & Cook Potatoes
Preheat oven to 425° (220°C). Cut peeled and rinsed potatoes into about ½ in cubes and add to a lined baking sheet.
Drizzle 1 Tbsp. olive oil over potatoes and season with salt, pepper, and cayenne. Bake in preheated oven for 15-18 mins, flipping potatoes halfway through cooking.
Cook Onions, Garlic, & Spinach
In a skillet over medium heat, add 1 Tbsp. olive oil. When oil is shimmering, add onions and cook until golden brown, about 3-4 mins. Add garlic and cook until fragrant, continuously stirring. Once aromatic, about 30-60 sec., add rinsed spinach. Cook until fully wilted, about 4-5 mins.
Add in Sour Cream
In the same skillet, mix in about ½ cup of sour cream. (Use depending on your preference. Greek yogurt also works.) Once combined, add the cooked potatoes and mix until the potatoes are coated. Serve.
