Easy Parmesan Orzo

Ingredients
2 Tbsp butter
1 onion
1 cup orzo
2 cups vegetable broth
½ cup grated Parmesan cheese
1 tsp garlic powder
2 Tbsp. basil (dried or fresh)
Salt & pepper, to taste
Cooking Steps
Cook Onion
Dice 1 onion. Melt butter in a heavy skillet over medium heat and cook onion in butter until translucent, about 3 min.
Simmer
Stir in orzo and sauté until lightly browned. Stir in veggie broth and garlic powder. Bring to a boil. Cover, reduce heat to low, and simmer until orzo is tender and liquid is absorbed, 15-20 min.
Add Cheese
Remove from heat and stir in Parmesan cheese and 2 Tbsp. basil. Season with salt & pepper to taste and serve!
