Quick Mushroom Parmesan Rice

Ingredients

  • ¼ cup cup par-boiled rice

  • ½ cup vegetable broth

  • 6 medium portobello mushrooms

  • 1 onion

  • ¼ cup Parmesan cheese, grated

  • Drizzle of olive oil

  • Salt & pepper, to taste

Cooking Steps

Prep 

Dice onion, grate parmesan cheese, and thinly slice mushrooms. 

Cook Veggies 

To a pot over medium heat, drizzle in some olive oil and cook the onion until lightly browned, 2-3 min. 

Add the sliced mushrooms to the pot, and cook until softened and reduced, about 4-5 min.

Cook Rice

To the mushrooms, stir in vegetable broth, rice, and salt & pepper, to taste. Bring to a boil. Once boiling, reduce heat to low, cover, and let cook for 15 min, or until most of the liquid has been absorbed by the rice. 

Serve rice with the grated parmesan on top. Enjoy!
