Quick Sheet Pan Pollock

Ingredients
6oz. pollock cuts (or other white fish)*
1 red onion
1 bell pepper
1 lime, juiced
1 Tbsp olive oil
1 tsp honey
1 tsp chipotle powder
¼ tsp paprika
Salt and pepper, to taste
*I use pollock from Wild Alaskan Company, however, you can use whatever type of white fish you desire. The cooking time will vary depending on the size & type of fish you use.
Cooking Steps
Prep
Roughly dice 1 red onion and 1 bell pepper. Juice 1 lime. Preheat the oven to 415°F (215°C).
Make Sauce
In a small bowl, whisk together lime juice, 1 Tbsp olive oil, 1 tsp honey, 1 tsp chipotle powder, ¼ tsp paprika, and salt & pepper, to taste.
Assemble
To a lined large baking sheet, add the pollock cuts to the middle. Surround the pollock with the veggies and drizzle over the sauce. *If needed, drizzle a little olive oil over the veggies. Season to taste with salt & pepper.
Bake
In the preheated oven, bake the sheet pan pollock for about 13-15 min., or until the pollock is cooked through. Once pollock is ready, remove it from the oven and eat! Serve as-is, in a taco shell, or even with rice. The possibilities are endless! Enjoy!
