Red Pesto Pasta

Ingredients

  • 1 jar of sun-dried tomato red pesto

  • 8 oz penne pasta

  • 1 onion

  • 1 clove garlic

  • 1 Tbsp. olive oil

  • 1 red bell pepper

  • ¼ cup Parmesan*

  • Salt & pepper, to taste

* I use shredded vegetarian Parmesan. If you are vegetarian, be sure to check if your Parmesan is vegetarian-friendly. 

Cooking Steps

Prep

Cook pasta according to bag/box instructions. Mince 1 clove of garlic and roughly chop bell pepper. Dice 1 onion. 

Cook Veggies

To a large skillet over medium heat, pour in 1 Tbsp. olive oil.

Saute onion in the pan for 2-3 min., or until translucent. Add garlic and cook until fragrant, about 30 sec. 

Next, add chopped bell pepper and cook until softened, about 4 min. Mix in red pesto and let simmer for 1-2 min. Season with salt & pepper, to taste.

Finish

Drain pasta. Stir to combine pasta with sauce. Top with Parmesan. Serve!
