Simple Granola

Ingredients
4 cups old-fashioned rolled oats
1 ½ cups walnuts (or other variety)
½ tsp salt
1 tsp cinnamon
½ cup coconut oil, melted
½ cup maple syrup or honey
1 tsp vanilla extract
Add as many mix-ins as you like. Chocolate chips, cranberries, sunflower seeds, etc.
Cooking Steps
Preheat oven to 350°F. Line a large, rimmed baking sheet with parchment paper.
In a large mixing bowl, combine the oats, nuts, salt, and cinnamon.
Pour in the oil, sweetener of choice, and vanilla. Mix well.
Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
Bake until lightly golden, about 20-25 min., stirring halfway.
Let the granola cool completely, about 40 minutes. Break apart and serve!
