Simple Granola

Ingredients

  • 4 cups old-fashioned rolled oats 

  • 1 ½ cups walnuts (or other variety)

  • ½ tsp salt

  • 1 tsp cinnamon

  • ½ cup coconut oil, melted 

  • ½ cup maple syrup or honey

  • 1 tsp vanilla extract

Add as many mix-ins as you like. Chocolate chips, cranberries, sunflower seeds, etc. 

Cooking Steps

  1. Preheat oven to 350°F. Line a large, rimmed baking sheet with parchment paper.

  2. In a large mixing bowl, combine the oats, nuts, salt, and cinnamon.

  3. Pour in the oil, sweetener of choice, and vanilla. Mix well.

  4. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.

  5. Bake until lightly golden, about 20-25 min., stirring halfway.

  6. Let the granola cool completely, about 40 minutes. Break apart and serve!
