Vegetable Stew with Farro

Ingredients
¼ cup farro
1 onion
2-3 carrots
1 bunch of parsley
2-3 gold potatoes
1 leek
2 Tbsp. olive oil
4 ½ cups vegetable broth
5 oz baby kale
Salt & pepper
Cooking Steps
Cook Farro
Wash farro thoroughly in a fine strainer under running water. Place in a pot and boil with enough water to cover the farro until tender, about 20 minutes.
Cut Veggies
Peel and finely dice the onion. Wash, peel, and chop the carrots, root of the parsley, and potatoes into bite-sized pieces. Wash, clean and cut the leek into short rings. Put everything aside.
Cook Stew
Heat 2 Tbsp olive oil in a large pot, sauté the onion until translucent on medium heat. Add the vegetables, sauté until lightly browned, about 5 min.
Add 4 ½ cups vegetable broth. Bring to a boil and simmer, covered, for 12-15 min until vegetables are tender.
Wash the baby kale. Stir farro and kale into stew and season stew with salt and pepper. Serve.
