1 Bowl Banana Bread

Ingredients
8 Tbsp. (1 stick) unsalted butter, melted
¼ cup sugar
¼ cup brown sugar, loosely packed
2 eggs
¼ cup milk
1 tsp vanilla extract
3 medium bananas, very ripe
2 cups all-purpose flour
¼ tsp salt
1 tsp baking soda
Optional: nuts or chocolate chips
- For this recipe, I use a 9x9 pan, instead of a traditional loaf pan. If you want a loaf banana bread the cook time will vary (about 50-55 min.). Baking time can vary, so be sure to check constantly.
Cooking Steps
Preheat Oven
Preheat the oven to 350°F (180°C). If using nuts, toast them in the oven for 5-10 min., while it is preheating.
Combine Butter & Sugars
In a large bowl, combine 8 Tbsp. (1 stick) unsalted melted butter, ¼ cup sugar, and ¼ cup brown sugar. Whisk until combined.
Add Eggs, Milk, & Vanilla
Crack 2 eggs into the bowl and whisk until completely smooth. Whisk in ¼ cup milk and 1 tsp vanilla extract.
Mash Bananas
Peel and place 3 very ripe medium bananas into bowl. (It helps with mashing to break the banana into pieces). Using a fork, mash the bananas into the batter. Mash to your preferred chunkiness/consistency.
Add Flour, Salt, & Baking Soda
To the batter, mix in 2 cups all-purpose flour, ¼ tsp salt, and 1 tsp baking soda with a spatula. Gently stir until just combined and no visible flour remains.
Optional: Fold in Mix-ins
If adding nuts or chocolate, gently fold into batter.
Cook Banana Bread
Pour the batter into a 9x9 pan lined with parchment paper, scraping down sides of the bowl. Smooth the top of the batter with spatula. Bake for 40-45 min., until bread is browned or a toothpick comes out clean.
Cool & Serve
Cool bread for at least 10 min and then serve!
