Baked Nectarine Oatmeal

Ingredients
½ cup honey or maple syrup
1 ¾ cup almond milk or other milk
1 tsp vanilla extract
3 cups old-fashioned oats
1 tsp cinnamon
¼ tsp salt
1 tsp baking powder
2 medium nectarines
½ cup chopped walnuts or pecans, optional
- For oatmeal squares or thicker oatmeal, add 2 eggs with the wet ingredients.
- You can replace the honey with brown sugar as well.
- If you’re feeling fancy, cut 6-8 thin slices from the nectarine for garnish before baking.
Cooking Steps
Prep
Preheat the oven to 350°F (180°C). Spray a 9x9 pan with cooking spray. Dice 2 medium nectarines.
Mix Ingredients
Mix together ½ cup honey, 1 ¾ milk, and 1 tsp vanilla in a large bowl. Combine dry ingredients: 3 cups old-fashioned oats, 1 tsp cinnamon, ¼ tsp salt, and 1 tsp baking powder with the wet ingredients.
Finally, fold in chopped nuts and nectarines.
Bake
Pour the batter into the prepared pan. Bake for about 18-20 min., or until the edges are lightly browned and a toothpick comes out clean from the center. Let cool for 10 min., before cutting. Enjoy!
