Everyone is used to the sweet and salty combo, but have you ever thought of extending this principle to your croutons? Brioche is usually just seen as the go-to bread for French toast but overlooked for more savory purposes. With this Brioche Crouton recipe, the flexibility of the brioche will shine through and might also become one your favorite breads to use for any meal type: breakfast, lunch, or dinner.
With this recipe, you may use any of the endless variations and forms of brioche. I generally just go with the most affordable option, which believe it or not, is usually brioche hamburger buns. I’ve tried brioche loaves, artisanal brioche, brioche hot dog buns, and many others, however, they all taste great. There is no need to buy anything more expensive unless that is your preference.
As the brioche itself is flexible, so are the other ingredients in this recipe. If you don’t have garlic cloves on hand, then you may use minced garlic from a jar or even garlic powder in its place.

Ingredients
12 oz of brioche (this amount will vary based on the number of croutons desired)
2 Tbsp of butter
2 cloves of garlic
Optional: Red pepper flakes
Cooking Steps
Cut Brioche
Begin by cutting 12 oz of brioche into desired size cubes. I prefer my croutons to be on the smaller side, so I cut them into ¾ in. cubes.
Mince Garlic
Finely mince 2 cloves of garlic.
Cook Butter and Garlic
Heat a skillet over medium heat and add 2 tbsp of butter and the 2 finely minced cloves of garlic.
Once the butter and garlic are bubbly, add the brioche cubes into the pan.
Quickly mix all the ingredients together and turn down the heat to a low medium heat to avoid burning.
Season Croutons
Add salt and pepper to taste. Optional: Add red pepper flakes to taste.
Gently turn the bread over in the pan to prevent burning. Cook on low medium heat until lightly browned on all sides. About 5-8 mins.
Remove from heat and serve.
