Cheesy Stuffed Shells

Ingredients
12 oz. jumbo shells
1 zucchini, finely shredded
1 jar of pasta sauce or my pasta sauce
16 oz ricotta cheese
1 Tbsp olive oil
2 cups mozzarella cheese
1 cup grated Parmesan
Salt & pepper, to taste
Cooking Steps
Prep
Preheat the oven to 400°F (200°C). Cook 12 oz. of jumbo shells. Drain, cool, and set aside.
Make Filling
Mix together 16 oz. ricotta, 8 oz. mascarpone, 1 zucchini, finely shredded, 1 Tbsp. olive oil, 1 cup grated Parmesan, 1 cup mozzarella cheese, and salt & pepper, to taste. Stuff the shells.
Arrange Shells
Grease 2 9x9 pans. Add ¼ of the pasta sauce to the bottom of each pan. Arrange half of the shells in 1 pan with the opening facing upwards, and cover with ¼ of the sauce. Top with ½ of the remaining mozzarella. Repeat.
Bake
Bake covered for 25 min. Then bake for 8 min. Serve!
