Cranberry White Chocolate Oat Bars

These easy Cranberry White Chocolate Oat Bars are so simple and can be enjoyed year-round. If you can wait, try to let these cool for at least an hour before cutting into bars. However, if you can’t wait (like me) let them cool for at least 10 min. and they will become more of an oat crumble.  

Ingredients

  • 1 ¼ cup rolled oats

  • 1 cup all-purpose flour

  • ⅔ cup brown sugar

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 egg

  • 10 Tbsp. melted butter

  • 1 Tbsp. vanilla extract

  • ½ cup white chocolate chips

  • ½ cup dried cranberries

Cooking Steps

Prep

Preheat the oven to 350°F (180°C). Line a 9x9 baking dish with parchment paper. 

Make Batter

In a large bowl, combine all ingredients besides white chocolate chips and dried cranberries. Mix until well combined. 

Add Other Ingredients

Finally, stir in white chocolate chips and dried cranberries. Spread the oat mixture into the prepared baking dish. 

Bake 

Bake the oats in the preheated oven for 20-25 min., or until a tester comes out with a few crumbs. (Try not to overbake). Let cool for at least an hour before cutting into bars, or enjoy after 10 min., for an oat crumble.
