Creamy Polenta with Vegetables

Have you ever wanted to try polenta but were too intimidated or nervous? Well, Hakuna Matata. This recipe will calm any worries that you may have about cooking polenta. Not only does it have minimal ingredients, but most of them are staple items that you would have in your pantry anyway. It doesn’t take a great chef to make polenta taste good. With only a few added vegetables, you will have a complete dinner using an Italian favorite—polenta.

Prep Time: 5-8 mins.

Cook Time: 15-20 mins.

Total Time: 20-28 mins.

Ingredients

  • 10 oz petite tomatoes

  • 1 zucchini

  • ½ tube polenta

  • 1 cup vegetable broth

  • 1 Tbsp. olive oil

  • Salt & pepper, to taste

- You can find polenta in a tube at the store, and it will already be cooked. I used this type of polenta in my recipe to speed up the process. It might seem weird to eat polenta from a tube, but trust me, it is still good.

- You can use any type of tomatoes; however, I prefer mini mixed-colored tomatoes. I like having a variety of tomatoes, but any kind of tomato will do.

- Since most households use broth, I suggested that you use vegetable broth in this recipe. However, if you prefer to use concentrated broth such as bouillon cubes or paste, please don’t hesitate to substitute that by following the instructions provided for your specific concentrate.

Cooking Steps

Prep & Cook Vegetables

In a skillet, add 1 Tbsp. olive oil. Cut the petite tomatoes in half. Cut the ends off the zucchini. Then cut the zucchini in half lengthwise. Next, cut the zucchini into half-moons, cutting widthwise.

Heat the skillet over medium heat. After 30 seconds, add the cut vegetables into the skillet. Stir and cook over medium heat for 5-8 mins, until completely softened. Season to taste with salt and pepper.

Cook Polenta

In a medium pot over medium heat, add ½ of a tube of prepared polenta and 1 cup of vegetable broth. Mix to break up the polenta. Stir occasionally and cook for 5-8 mins.

Once the polenta has a creamy consistency, remove from heat, and serve with veggies on top.
