Easy Fiesta Rice

Ingredients

  • 1 cup instant rice

  • 1 can sweet corn, 15.25 oz or 430g

  • 1 can petite diced tomatoes, 14.5 oz or 410g

  • 1 can black beans, 15 oz. or 425g

  • 1 onion

  • 1 bell pepper

  • 1 tsp cumin

  • ½ tsp chipotle powder

  • ¼ tsp cayenne pepper

  • salt & pepper, to taste

  • shredded cheese, to taste (optional)

Cooking Steps

Prep

Preheat the oven to 400°F (200°C). Roughly dice 1 onion and 1 bell pepper. Rinse and drain 1 can of black beans and 1 can of sweet corn. 

Combine Ingredients

To a large bowl, combine 1 cup of instant rice, corn, beans, 1 can of petite diced tomatoes, onion, bell pepper, and spices (1 tsp cumin, ½ tsp chipotle powder, ¼ tsp cayenne pepper, and salt & pepper, to taste). Mix until combined.

Add 14.5 oz of water (1 tomato can full) to the ingredients and mix to combine.

Bake 

Divide the mixture between 2-9x9 in. pans. Top with shredded cheese, to taste. Cover with aluminum foil and bake for 30-40 min., or until rice is tender. *If saving one, place plastic wrap over the pan and store in the fridge for up to 1 day. Enjoy!
