Easy Zucchini Bread

Ingredients

  • 1 ½ cups flour

  • 1 ½ cups grated zucchini-about 1-2 medium zucchini

  • ⅔ cup sugar

  • ⅓ cup vegetable oil

  • 1 tsp vanilla extract

  • 2 eggs

  • 1 tsp baking soda

  • ½ tsp salt

  • ½ tsp cinnamon

  • Optional: walnuts

Cooking Steps

Preheat Oven

Preheat the oven to 350°F (180°C). Line a 9x9 pan with parchment paper.

Mix Ingredients

In a large bowl, stir 1 ½ cups zucchini, ⅔ cup sugar, ⅓ cup vegetable oil, 1 tsp vanilla, and 2 eggs together until well combined. Stir in 1 ½ cups flour, 1 tsp baking soda, ½ tsp salt, and ½ tsp cinnamon. Finally, fold in walnuts, if adding. 

Bake Bread

Pour batter into the prepared pan and bake for 40-45 min., or until a toothpick comes out clean. Let cool in the pan for about 10 min. Once cooled, serve and enjoy!
