Easy Zucchini Bread Muffins

Ingredients

  • 1 ½ cups all-purpose flour

  • ½ cup granulated sugar

  • ½ tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 tsp cinnamon

  • ½ tsp vanilla extract

  • 2 large eggs

  • ½ cup vegetable oil

  • 1 medium-large zucchini

Prep

Preheat the oven to 350°F (190°C). Spray 12 muffin cups with cooking spray or line with baking cups. 

Make Batter

In a large bowl, beat 2 large eggs together and then whisk in ½ cup vegetable oil. Next, grate 1 medium-large zucchini over the bowl and stir to combine. Finally, stir in 1 ½ cups all-purpose flour, ½ cup granulated sugar, ½ tsp baking powder, ½ tsp baking soda, ½ tsp salt, 1 tsp cinnamon, and ½ tsp vanilla extract until fully combined and moist. 

Bake

Divide the batter between the 12 prepared muffin cups, filling about ¾ of the way full. Bake in the preheated oven, for 20-24 min., or until a toothpick comes out clean. Let muffins cool in the pan for about 10 min. before serving. Enjoy!
