English Muffin Breakfast Sandwiches

Ingredients

  • 2 English muffins, sliced

  • 2 eggs

  • Shredded cheddar cheese

  • Salt & pepper, if desired

Cooking Steps

Cook Eggs

In a skillet over medium heat, crack in 2 eggs. Cook until scrambled, about 1-3 min. Season with salt & pepper. Meanwhile, heat 2 sliced English muffins in a toaster or oven until lightly toasted and browned. 

Assemble Sandwiches

Add shredded cheese on top of eggs and let melt over medium heat, about 30 sec. Remove pan from heat and mix eggs , letting cheese melt even further. 

Place eggs on English muffin halves and place the other half on top to make a sandwich. Enjoy!
