Oatmeal Chocolate Chip Peanut Butter Squares

Ingredients

  • 1 cup rolled oats/old fashioned 

  • ¼ cup flour

  • ¼ tsp baking powder

  • ¼ tsp baking soda

  • ¼ tsp salt

  • 2 tbsp coconut oil, melted

  • ½ cup unsweetened applesauce

  • ¼ cup maple syrup

  • ¼ cup peanut butter

  • 1 tsp vanilla extract 

  • ⅓ cup semisweet chocolate chips

Cooking Steps

Prep

Preheat oven to 350°F (180°C). Line a 9x9 glass pan.

Combine Dry Ingredients 

In a medium bowl, combine 1 cup rolled oats/old fashioned , ¼ cup flour, ¼ tsp baking powder, ¼ tsp baking soda, and ¼ tsp salt. 

Combine Wet Ingredients 

In a separate bowl, mix to combine 2 tbsp, melted coconut oil, ½ cup unsweetened applesauce, ¼ cup maple syrup, ¼ cup peanut butter, and 1 tsp vanilla extract.

Finish Batter 

Mix the dry ingredients into the wet ingredients until just combined. Fold in ⅓ cup semisweet chocolate chips. 

Bake

Spread the batter evenly into the prepared pan. Bake for 15-20 minutes or until golden brown. Let cool completely before cutting into bars. Serve or store in a sealed container for a max of 3 days.
