Plum Cobbler Recipe - 1 Bowl

Plums are a wonderful, yet normally forgotten fruit. Rich in antioxidants and flavor, this fruit is perfect for a crumbly crust cobbler. Have a piece and fall in love with plums!

Total Time: 50 min. 

Ingredients

Filling:

  • 8-10 plums

  • ⅓ cup brown sugar

  • 2 Tbsp. apple cider (optional)

  • 1 small apple

  • 3 Tbsp. cornstarch

  • 1 tsp cinnamon

  • 1 tsp vanilla 

Topping

  • 1 cup flour

  • 1 ½ tsp baking powder

  • ½ tsp salt

  • ⅓ cup sugar

  • 8 Tbsp unsalted butter, cold 

  • 5 Tbsp. half & half

  • Sugar for sprinkling (optional)

Cooking Steps

Prep

Pit and slice plums. Grate the apple. Preheat the oven to 375°F. Lightly grease a 9x9 baking pan. 

Make Filling 

In a large mixing bowl combine plums, brown sugar, apple cider, apple, cornstarch, vanilla, and cinnamon.

Pour mixture into the baking pan using a spatula, scraping the sides of the bowl. 

Make Topping

In the same bowl, combine the flour, baking powder, salt, and sugar.

Cut in Butter

Cut 8 Tbsp. cold unsalted butter into small cubes. Cut the butter into the flour mixture using 2 knives or a pastry blender until the mixture resembles coarse sand.

  • Tip: You can also use your hands to combine the butter with the flour

Finish Topping

To the flour & butter mixture, add 5 Tbsp. half & half and stir with a fork until moistened and large crumbs are formed. 

Sprinkle the crumble over the top of the filling. Finally, sprinkle the cobbler with sugar (optional). 

Bake

Bake in the preheated oven until the top is golden and the filling is bubbling about 30-35 min.

  • Tip: Place a rimmed baking sheet underneath the cobbler to catch any liquid that could possibly fall out. Usually only necessary when the fruit is very juicy or the filling is close to the top of the pan.
