Vegan Fried Cabbage

My take on the southern classic–fried cabbage. Instead of using butter and bacon like usual, I use olive oil and onion. Plant-based can be good and you won’t even miss the meat! And here’s a secret..shh…this version is healthier than its traditional counterpart. Win-win.

Ingredients

  • 1 head of cabbage

  • 1 medium white or yellow onion

  • 1 Tbsp olive oil

  • Salt & pepper, to taste

Prep Vegetables

Remove outer leaves and cut cabbage into desired-sized pieces. ( I like about 2-inch pieces). Rinse off cut cabbage in a strainer or colander.

Roughly dice 1 medium onion

Cook Cabbage

In a large skillet over medium heat, add in 1 Tbsp olive oil. Once the oil is shimmering, place diced onion into the skillet and cook until lightly browned about 3-4 mins. 

To the onions, add in the cut cabbage. Cook, stirring occasionally until softened, about 10-12 mins. Season with salt and pepper to taste.

Serve immediately.
