Vegetarian Pizza Pockets

Ingredients

  • 1 medium onion

  • 1 bell pepper

  • 1 ½ cups shredded mozzarella cheese

  • 1 Tbsp. olive oil

  • 1 egg, beaten

  • Pizza sauce*

  • Premade pizza dough, divided into 6 pieces*

*You can use a jarred pizza sauce or use my recipe for pizza sauce.

*You can use a store-bought premade pizza dough or my recipe for pizza dough

- Add any other ingredients that you would normally have as a topping on your pizza such as pineapple or jalapenos. 

Cooking Steps

Prep Vegetables

Preheat the oven to 375 °F (190°C).

Dice 1 medium onion and 1 bell pepper. In a skillet over medium heat, add diced vegetables and cook, stirring occasionally, for 4-5 min., or until softened. 

Assemble Pizza Pockets

Divide pizza dough into 6 pieces. Roll each dough piece into rounds, about ¼-½ in. thick, depending on preference. Spoon pizza sauce, 1 ½ cups mozzarella cheese, and vegetable filling evenly onto the dough. Make sure to leave a little room on the edges of the dough so it is easier to close. 

Bake Pizza Pockets

Fold each pizza pocket in half. Close the edges with a fork. Brush the tops of the pockets with 1 beaten egg. Bake at 375°F (190°C) for 20-25 min, or until browned on top. 

Serve with any remaining sauce and enjoy!
