BBQ Mushroom Sliders

Ingredients
6 slider buns
16 oz baby bella mushrooms, sliced
1 ½ Tbsp avocado oil or canola oil
¼ tsp garlic powder
¼ smoked paprika
¼ tsp hot paprika (or: ⅛ tsp paprika & ⅛ tsp cayenne)
1 onion
1 Tbsp olive oil
½ cup ketchup
2 Tbsp white wine vinegar
2 Tbsp molasses
¼ cup honey
¼ tsp sweet paprika
¼ tsp smoked paprika
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp cayenne powder
Optional: Quick Pickled Cucumber
Cooking Steps
Prep Ingredients
Preheat oven to 425°F (220°C). Clean off 16 oz sliced baby bella mushrooms. Place mushrooms onto a baking sheet with 1 ½ Tbsp. avocado or canola oil. Season with ¼ tsp garlic powder, ¼ tsp smoked paprika, ¼ tsp hot paprika, and black pepper to taste.
Bake Mushrooms
Arrange mushrooms in a single layer and bake until browned and crispy, about 15-17 min.
Make BBQ Sauce
While mushrooms are roasting, heat 1 Tbsp olive oil into a pan over medium heat. Once oil shimmers, add onions. Cook until onions are translucent, about 7 min. Combine spices in a small bowl. Stir ketchup, vinegar, honey, and molasses together in a pan until smooth. Stir in seasoning and reduce heat to medium-low. Simmer until thickened, about 12-15 min.
Optional: Make Pickled Cucumbers
Finish Mushrooms
Once mushrooms are roasted, combine mushrooms with sauce and cook, stirring for about 3 min.
Toast slider buns in the oven cut side up for 2-3 min., on a baking sheet.
Serve
Divide BBQ mushrooms between buns and serve with quick pickled cucumbers on the side!
