vegan pickled cucumber easy with shallot red onion

Ingredients

  • 2 Tbsp. vinegar (sherry, white wine, etc.)

  • ½ of an English cucumber 

  • 2 medium shallots or ½ of a red onion 

  • 1 tsp sugar

  • Salt & pepper, to taste

Cooking Steps

Chop Ingredients

Finely slice ½ of an English Cucumber and 2 medium shallots. Add into a bowl. 

Pickle Ingredients

Add 2 Tbsp. vinegar, 1 tsp sugar, and salt & pepper to taste into the bowl. Mix to combine and let sit for at least 10 min. Serve immediately or chill in the refrigerator.
