Black Bean & Corn Salsa

Ingredients

  • 15 oz corn (430g)

  • 15 oz black beans (425g), drained and rinsed

  • 2 roma tomatoes

  • 1 bell pepper

  • 1 small sweet or red onion

  • Juice of 1 lime

  • Drizzle of olive oil

  • ⅛ tsp cayenne pepper

  • Salt & pepper

Cooking Steps

Prep Ingredients

Dice 2 roma tomatoes, discarding seeds. Dice 1 small sweet or red onion. Dice 1 bell pepper. 

Combine

To a large bowl combine corn, black beans, tomatoes, bell pepper, onion, juice of 1 lime, a drizzle of olive oil, ⅛ tsp cayenne pepper, and salt & pepper to taste. Serve immediately or chill in the refrigerator.
