Quick 1 Pan Pasta with Zucchini

Ingredients

  • 1 zucchini

  • 1 medium onion

  • 1 tsp minced garlic

  • 3 roma tomatoes

  • 1 Tbsp olive oil

  • 2 ½-3 cups water

  • 8 oz penne pasta

  • Salt & pepper

- You can substitute 8oz of canned tomatoes for the roma tomatoes. 

Cooking Steps

Prep Ingredients

Dice 1 medium onion. Cut zucchini into ½ in. half moons. Grate or blend 3 roma tomatoes. 

Saute Veggies

Add 1 Tbsp olive oil to a large pan over medium heat. Once oil shimmers, add in diced onion. Saute for 2-3 min. 

Next, add in sliced zucchini. Cook until softened, 3-4 min.  

Cook Pasta

To the pan, stir in blended or grated tomatoes and season to taste with salt and pepper. Let tomatoes simmer over medium heat for 2 min. Add in 8 oz penne pasta and then 2 ½ -3 cups of water. (Depending on the tomatoes and the size of your pasta, the amount of water will vary. For a thicker sauce, use less water). Bring to a boil and then cover. Cook for 10-12 min, or until pasta is al dente. 

Finish

Remove lid and let stand for 1-2 min, off heat. Serve and enjoy!
