Ingredients
2 cups all-purpose flour
2 tsp. Baking powder
½ tsp. Kosher salt
11 Tbsp cold unsalted butter
1 cup buttermilk*
1 ½ Tbsp melted butter
*Buttermilk Substitute: 1 Tbsp. lemon juice or 1 Tbsp. vinegar a little less than 1 cup milk. You want to have 1 cup total of the mixture so a little less than 1 cup of milk will be used. Let stand for 5 min.
Kosher salt is recommended but use what you have on hand.
Easily melt butter in the microwave at 30-sec intervals.
Cooking Steps
Preheat Oven
Preheat the oven to 450°F (230°C).
Cut Butter
Cut 11 Tbsp. cold unsalted butter into ½ in. thick pieces.
Combine Dry Ingredients
Combine 2 cups all-purpose flour, 2 tsp. baking powder, and ½ tsp kosher salt in a medium bowl.
Cut in Butter
To dry ingredients, cut in 11 Tbsp. cold unsalted butter with a knife or fork until the mixture resembles coarse crumbs. Stir in buttermilk until just moistened.
Knead Dough
Turn dough onto a lightly floured surface. Knead 10 times or until smooth.
Form dough into a 9x4-inch rectangle, about ½ in. thick. If dough becomes too sticky to form, add more flour by the tsp to help.
Cut Dough
Cut dough in half lengthwise. Cut crosswise into 4 even pieces to form 8 rectangular biscuits. Place on a baking sheet, about 1 in. apart.
Bake Biscuits
Brush the tops of the biscuits with 1 ½ Tbsp. melted butter. Bake at 450°F (230°C) for 11-13 min., or until golden brown. Check biscuits occasionally to ensure that they don’t overbake.
Serve warm with butter or jam!
