Pollock Nuggets - Baked

No fryer needed! This crispy pollock nugget isn’t oily and brings the crunch you’ve been seeking.

Ingredients

  • 6 oz pollock* (170g)

  • 1 cup sparkling water (240ml)

  • ¾ cup flour (90g)

  • 2 Tbsp cornstarch

  • 1 Tbsp garlic powder

  • 1 Tbsp onion powder

  • 1 tsp cayenne powder, optional

  • ¼ tsp salt

  • 1 tsp black pepper

  • 1 cup panko breadcrumbs (120g)

* I use Wild Alaskan pollock cuts, however, you can use another type of white fish. https://wldaskn.com/w/WS5SNp

Cooking Steps

Prep

Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper. 

Make Batter

In a large mixing bowl, whisk together sparkling water, flour, cornstarch, and spices to form a batter.

In a separate medium bowl, stir together panko breadcrumbs and salt & pepper, to taste. 

Batter the Pollock

Add the pollock cuts in batches to the batter, making sure all sides are coated. Transfer the pollock to the bowl with breadcrumbs, coating all sides. Finally, place the pollock on the prepared baking sheet. 

Bake

Bake in the preheated oven for about 15-18 min., or until golden brown and crispy. Be sure to flip the pieces halfway through baking. 

Remove from the oven and toss in sauce or serve with sauce on the side.
