Quick Lunch Idea: Bean & Bell Pepper Rice Bowl

✨️ Measure with your heart for this recipe. Add more or less of each ingredient to your taste.

Ingredients

- Black beans, rinsed

- Bell pepper, diced

- Red onion, diced

- Olive oil

- Lime juice

- Honey or sugar, if desired

- Cayenne powder, if desired

- Salt & pepper, to taste

How to Make

- Cook Rice of choice. Set aside. 

- To a medium bowl, stir to combine olive oil, lime juice, honey, cayenne, and salt & pepper

- To the same bowl, add in black beans, bell pepper, & red onion. Mix. 

- 🕐Time to plate! Spoon the rice into bowls and top with the beans and bell pepper. Serve!

  • Tip: You can prep the bean & bell pepper mixture and store in the fridge. It even goes well solo if you don't want rice.
