Quick Pico de Gallo

Looking for a companion to tortilla chips or a topping to a quesadilla? This Pico de Gallo recipe is fast and easy, yet flavorful. Give it a try and soon it will become your new favorite topping or side.
Any tomatoes will work for this recipe; however, I do prefer to use Roma tomatoes. I like the firm texture that they bring so I always use them.
You can adjust the amount of jalapeño and seeds that you use in your Pico de Gallo. I prefer to have more spice, so I include the seeds, but I don’t like my mouth being on fire, so I only use 1 pepper. If you are accustomed to more spice, then add as much as you like.
I don’t add any cilantro; however, you may add it if you like.
Prep Time: 5 mins.
Total Time: 7-8 mins.

Ingredients
1 lime
1 red onion
2 Roma tomatoes
1 jalapeño
½ tbsp. olive oil
Salt and pepper
If desired: Handful of cilantro
Cooking Steps
Prep Ingredients
Finely dice red onion and jalapeño. Dice tomatoes. Juice lime. Add ingredients into bowl.
Mix Ingredients
Stir ingredients together. Add ½ tbsp. olive oil into the bowl and stir to combine. Let sit for 2-3 minutes to let the flavors combine. Season to taste with salt and pepper.
