Red Kuri Squash-2 Ways

Bright red and a Hershey kiss’s twin? What kind of squash is this? Meet the red kuri squash; a winter squash that, once cooked, is mildly sweet yet delicious. If you ever see one at the store, give it a try and follow one of the two ways I have below!

  •  These methods for cooking the red kuri squash, can be generalized to fit other types of squash, but do be aware that cook times may differ as all squash varieties vary.

  • Be sure to use a sharp knife, as squash is more difficult to cut through than normal produce.

Prep Time: 10-15 mins.

Cook Time: 30-40 mins.

Total Time: 40-55 mins.

Ingredients

  • 1 Red Kuri Squash

  • 1 Tbsp. of olive oil

  • Salt and pepper

Cooking Steps

Prep Squash

Thoroughly wash and rinse off the squash. Once washed, cut off the stem at the top of the squash. You may also cut the bottom of the squash off if you like, however, the squash is generally very level at the bottom.

Cut Squash

Preheat oven to 425°. Cut lengthwise down the center of the squash. Spoon out the seeds.  

*Halved Red Kuri-Roasted

  • Drizzle about 1 Tbsp. of olive oil (in total) over the Red Kuri halves. Season with salt and pepper.

  • Place on a lined baking sheet, face side up, and cook in the preheated oven for about 30-40 mins.

  • Once roasted and the inside can be easily pierced with a fork, remove from oven. Let cool for a few minutes before serving, as the squash will be very hot to the touch.

*Diced Red Kuri-Roasted

  • Once the squash is cut into halves, turn the halves so that the skin is facing upwards. Cut off the skin, making sure to not cut off too much of the inside of the squash. Once the skin is removed, cut the squash into about ½ in cubes.

  • Transfer the red kuri pieces to a lined baking sheet. Coat the pieces with about 1 Tbsp. of olive oil and season to taste with salt and pepper. You may add any additional spices here if desired, such a cumin.

  • Add the squash to the preheated oven and bake for about 30 mins, checking halfway in between and mixing to evenly cook both sides of the squash.

  • Once the squash is a deeper orange and browned on the edges, remove from the oven. Serve.
