Red Lentil Soup

Are you looking for a recipe to use up some lentils? Or do you want to try something new? Well, this recipe is for anyone and is easy to make. With only a handful of ingredients and only 20 minutes, you can have a meal that serves up to 6. If you don’t have a large family, no problem, you just made yourself some leftovers! What is better than meal-prepping without having to think about meal-prepping? If you like easy and quick meals, then give the red lentil soup recipe a try!

  • Since most households use broth, I suggested that you use vegetable broth in this recipe. However, if you prefer to use concentrated broth such as bouillon cubes or paste, please don’t hesitate to substitute by following the instructions provided for your specific concentrate.

  • If you want something to complement your red lentil soup, try out these easy Rosemary & Thyme Cheese Biscuits. They’re easy to pair with this recipe because you make them while you wait for your soup to finish cooking.

  • If you want to use other lentils, such as green or French lentils, the cooking time will vary so follow the directions on the package of your specific type of lentils.

  • I chose 12 minutes to cook the lentils, so they get soft, while still having some substance. However, if you want them to be softer, cook the red lentils for a few minutes more.

Prep Time: 3 mins.

Cook Time: 17 mins.   

Total Time: 20 mins.

Ingredients

  • 1 Tbsp of Olive Oil

  • 1 cup red lentils

  • 1 lb. of carrots

  • 1 Large onion

  • 4 cups of vegetable broth

  • Salt and pepper

Cooking Steps

Prep Vegetables

Finely dice onion. Cut carrots into about ½ in. pieces.

Cook Vegetables

Into a large pot, add 1 Tbsp of olive oil over medium heat. Add diced onions and carrots. Season with salt and pepper to taste. Cook, stirring occasionally, until onions are translucent, about 5 minutes.

Cook Lentils

Once onions are translucent, add in 1 cup of red lentils and 4 cups of vegetable broth. Season with salt and pepper to taste. Turn to high heat and bring to a boil.

Simmer Soup

Once boiling, reduce heat to low. Cover and simmer until the lentils are soft, about 12 mins. A perfect side to go with this lentil soup are my Rosemary & Thyme Cheese Biscuits. Give them a try if you want a little something extra.
