White Beans on Toast

Beans on toast? Am I now British? No, you’re not exactly British now that you eat beans on toast, but you are a cool person. I will admit that I wasn’t particularly excited to try beans on toast but once you try it, you will reevaluate your life choices. Hopefully, you’ll have the reaction of “why didn’t I try this sooner?” but you may also still hate it. And, yes, you have the right to blame me for that in the comments down below. Hear me out first though: with Italian spices and toasted bread, these beans on toast cannot taste any better. This recipe uses white beans which are very mild in taste and bend to whatever spices you put onto them. Pair these white beans with any bread that you like, and you are well on your way to becoming a cool person who likes beans on toast (at least I think so) :) Note: This recipe takes all of 10 minutes so if you like it then you have another quick and easy recipe to add to your arsenal.

  • I prefer to use cannellini beans, but you can use any kind of white beans.

  • The onion could also be of any variety, it doesn’t make a large difference. White and yellow onions have more of a true onion flavor, while red is more subtle and sweet when cooked.

  • I prefer to use regular honey wheat sandwich bread. You can buy more artisanal bread if you choose.

  • Mushing a few of the white beans during the cooking process will make the bean mixture easier to spread of a piece of toast. You can omit this step if you prefer to only have whole beans.

Prep Time: 3 mins.

Cook Time: 7 mins

Total Time: 10 mins.

Ingredients

  • 1/2 of an onion-finely diced

  • 15oz can of white beans

  • 2 cloves of garlic-minced

  • 1 tbsp of water

  • 2 tsps. Italian Seasoning

  • Salt and pepper

  • 1 tbsp of olive oil; drizzle of olive oil

  • Optional: a few leaves of fresh parsley

Cooking Steps

Dice Onion & Mince Garlic

Finely dice ½ of an onion and save the other half for another recipe

Roughly mince 2 cloves of garlic

Rinse Beans

Rinse a 15 oz can of white beans in a sieve or strainer.

Cook Beans, Garlic, and Onion

In a pan over medium heat, add 1 tbsp of olive oil, minced garlic, diced onions, and rinsed white beans. Cook for about 4-5 mins or until slightly browned.

Add Seasoning

Add 2 tsps. of Italian seasoning to the beans. Season with salt and pepper to taste.

Add Water

To the beans, add 1 tbsp of water and subsequently mash a few of the beans with the back of a spatula or other cooking utensil. Lower the heat to medium-low. Cook for about 2-3 minutes or until slightly thickened.

Toast Bread

While the beans are cooking on medium-low heat, toast your bread of choice.

Finish and Plate

Once the bean mixture is browned and has thickened, remove from the heat.

Take the toasted bread and place on a plate. Top the bread with the bean mixture and drizzle over a little bit of olive oil. For additional flavor, add a few leaves of fresh parsley
