Simple Apple Galette

Ingredients
- ⅔ cup all-purpose flour + 2 Tbsp
- ½ cup granulated sugar + 1 ¼ tsps.
- 6 Tbsp. cold butter
- juice of 1 lemon
- 3 medium apples
- ½ tsp salt
- ¼ cup of water
- ⅛ tsp ground ginger
- ½ tsp cinnamon
Cooking Steps
Make Dough
In a medium bowl, combine ⅔ cup flour, 1 tsp sugar, and ½ tsp salt. Cut 6 Tbsp cold butter into about ½ in pieces and stir into the flour mixture. Use your fingers to flatten and press the butter in slightly.
Chill Dough
Sprinkle ¼ cup of very cold water over the butter. Stir until just combined. Next, use your hands to knead the mixture a few times until the dough forms a shaggy ball. Form the dough into a round 4-inch disk (about ¾ inch thick). Wrap in plastic and chill in the fridge for at least an hour (max 24 hours).
Make Filling
Preheat the oven to 375°F (190°C). Peel and quarter 3 medium apples. Cut apples into ½-inch thick slices then place them into a medium bowl. Stir the juice of 1 lemon, ½ cup sugar, 2 Tbsp flour, ⅛ tsp ground ginger, ½ tsp cinnamon, and a pinch of salt with the apples to combine.
Form Galette
On a well-floured surface, roll out the dough into a 10-inch circle. Transfer the dough to a rimmed baking sheet lined with parchment paper. Spoon the filling into the dough, leaving a 1-inch border around the edges. Fold the edges of the dough over the filling, leaving the majority of the fruit exposed.
Bake Galette
Sprinkle the crust with about ¼ tsp sugar. Bake until the crust is golden brown and the filling is bubbly about 45 min. Remove from the oven and let cool. Enjoy!
