Apple-Cinnamon Breakfast Bowl

Are you dreaming of a warm, easy, and indulgent breakfast? This simple Apple-Cinnamon Breakfast Bowl will give you the dessert you crave in the morning without being too time consuming. With minimal ingredients, you can have a breakfast within minutes that will satisfy your sweet tooth.

- You can use 1 tbsp of unsalted butter in place of coconut oil to make this recipe not vegan.

- I use plant-based yogurt like cashew, almond, coconut, soy, etc. to make mine dairy-free. However, you may substitute the plant-based yogurt for any dairy yogurt like plain Greek yogurt.

- Rolled oats, not instant oats, are the best for this recipe. Since we are just lightly toasting the oats, rolled oats will give you that crispness and a heartier breakfast.

- I always like to add spices into my food that have good natural properties. Turmeric is one of those spices that does help fight inflammation, but I don't always love its overpowering taste. However, in small amounts, especially in oatmeal with cinnamon, you don't even notice that it is there. Helping your body without noticing is a win-win so I recommend adding the turmeric if you have it on hand.

Ingredients

  • 2 apples

  • 2 tsps of cinnamon (divided)

  • 1 tbsp of coconut oil

  • 1/2 cup of yogurt (divided)

  • 1/2 cup of rolled oats (divided)

  • 1 tbsp of brown sugar

  • 1/3 cup water

  • Optional: 1/8 teaspoon of turmeric

Cooking Steps

Fill Bowl with Yogurt

Divide yogurt between 2 serving bowls.

Prep Apples

Rinse and dry 2 apples. Once rinsed, cut the apples into small cubes (about ½ in cubes).

Cook Apples

Heat a pan over medium heat. Add 1 Tbsp of coconut oil to the pan.

Once fully melted, add in the cubed apples. Heat for 3 minutes or until apples are lightly softened, stirring occasionally.

Add in Cinnamon & Water

Add 1 tsp of cinnamon and stir for 30 seconds, then add 1/3 cup of water. Cook for 2 minutes to further soften the apples.

Add in Brown Sugar

 Once some of the water has dissipated and the apples are soft, place 1 tbsp of brown sugar into the apple mixture. Cook on medium-low heat for about 2-3 minutes, stirring occasionally.

Toast Oats

Remove the apples from the pan and place into the serving bowls with yogurt. Using the same pan, add 1/2 cup of rolled oats over medium-low heat.

Season oats with 1 tsp of cinnamon and 1/8 teaspoon of turmeric.

Cook oats for about 3 minutes or until browned, stirring often to avoid burning.

Remove Oats and Plate

Once oats are toasted, remove from heat, and divide evenly into the serving bowls with yogurt and apples.
