Apple Cinnamon Muffins

Ingredients

  • 1 ½ cups all-purpose flour

  • ¼ cup brown sugar

  • ¼ cup granulated sugar

  • 1 ½ tsp baking powder

  • 1-1 ½ tsp ground cinnamon

  • 1 medium apple (1 cup), finely diced 

  • ½ cup milk

  • ⅓ cup butter, melted

  • 1 egg, beaten

Cooking Steps

Prep

Preheat oven to 375°F (190°C). Line a muffin pan (12 cups) with baking cups or grease with oil/butter. 

Combine Ingredients

Stir to combine 1 ½ cups all-purpose flour, ¼ cup brown sugar, ¼ cup granulated sugar, 1 ½ tsp baking powder, and 1-1 ½ tsp ground cinnamon in a large bowl.  Add in  ⅓ cup melted butter,  1 beaten egg, and ½ cup milk to the flour mixture and stir until moistened. Finally, fold in 1 finely diced medium apple (1 cup). 

Bake

Spoon batter into muffin pan and bake for 18-20 min., or until browned. Let cool in the pan for about 5 minutes before serving. Remove and enjoy!
