Roasted Red Pepper Pasta

Ingredients

  • 8 oz penne pasta, cooked (reserve about ¼ cup pasta water)

  • 1 zucchini

  • 1 onion

  • 1 jar roasted red peppers, drained

  • 1 Roma tomato

  • 1 Tbsp olive oil

  • Salt & pepper

Cooking Steps

Prep Ingredients

Slice 1 zucchini into ½ in. half moons. Dice 1 onion and roughly dice 1 jar of roasted red peppers. Blend or grate 1 Roma tomato. 

Cook Vegetables

Add 1 Tbsp olive oil over medium heat in a deep skillet. Once oil shimmers, add in diced onion and sliced zucchini. Cook until zucchini is softened, about 5 min., occasionally stirring. 

Make Sauce

Once the vegetables are softened, add in the blended Roma tomato and season with salt & pepper, to taste. Reduce heat to medium-low and simmer for 2-3 min. Finally, add roasted red peppers and stir to combine. Add in cooked penne. *Add reserved pasta water if the sauce is too thick. Serve!
