Sweet Potato Black Bean Chili (Vegan)

Ingredients

  • 1 sweet potato

  • 1 red onion

  • 1-15.5 oz can of black beans

  • 1 Tbsp. olive oil

  • 14.5 oz water (1 tomato can full)

  • 1- 14.5 oz can diced tomatoes 

  • 1 tsp chipotle powder

  • ½ tsp cumin 

  • ½ tsp paprika

  • Salt & pepper, to taste

Cooking Steps

Prep

Rinse & drain black beans. Roughly dice 1 red onion. Peel and cut the sweet potato into ½ in. (1 ½ cm.) cubes. 

Cook Onion 

Put 1 Tbsp. olive oil into a large pot over medium heat. Add onions to the pot and cook until the onions are softened about 3-4 min.

Once the onions are soft, add the sweet potato cubes. Cook for an additional 4-5 min., until cubes are lightly browned, stirring occasionally. 

Add Tomatoes

To the sweet potatoes, pour in diced tomatoes. Season with 1 tsp chipotle powder, ½ tsp cumin, ½ tsp paprika, and salt & pepper to taste. Mix well. Stir in a tomato can full or 14.5 oz water. Bring to a boil. 

Finish

Once boiling, add rinsed black beans to the pot. Return to a boil. Once boiling, turn down the heat to low and cover. Let simmer for 15 min. 

Remove from heat and take off the lid. Serve!
