Tortellini with Roasted Butternut Squash

Ingredients

  • ½ of a butternut squash

  • 1 Tbsp. olive oil 

  • 2 Tbsp. unsalted butter

  • 10 oz tortellini

  • Sprinkle of Parmesan

  • Salt & pepper

Cooking Steps

Roast Squash

Preheat the oven to 415°F (210°C). Cut ½ of a butternut squash into 1-inch cubes. Transfer cubes to a lined baking sheet and drizzle with 1 Tbsp olive oil. Bake for 15-18 mins., or until softened. 

Make Sauce

Cook tortellini according to package instructions.

In a large skillet, melt 2 Tbsp. unsalted butter over medium heat. Transfer tortellini and butternut squash and toss to coat. Sprinkle the top of the tortellini with Parmesan and season with salt & pepper to taste.
