Veggie Summer Fettuccine

Ingredients

  • 12 oz green beans

  • 3 oz peas, cooked

  • 9oz fettuccine, cooked

  • 4oz Parmesan cheese (vegetarian)

  • 4 cloves garlic

  • ¼ cup heavy cream

  • ¼ cup water

  • Salt & pepper, to taste

Total Time: 10 min.

- I like having a lot of garlic in my meals, however, if you don’t want to use 4 cloves, you can certainly reduce the amount to your liking. 

- To make this recipe vegetarian, I use Belgioioso Vegetarian Shredded Parmesan cheese. Not all Parmesan cheese is vegetarian, so do be sure to check for that if you want to have a vegetarian meal. I buy mine from Imperfect Foods. Cooking Steps

Prep Ingredients

Roughly mince 4 cloves of garlic. Trim and cut 12 oz green beans at a slant, into about 1-1.5 in pieces. 

Cook Green Beans

In a medium skillet, heat 1 Tbsp olive oil over medium heat. Add green beans and saute for 3-4 min., stirring occasionally. Add half of the minced garlic and stir until fragrant, about 30 sec. Season with salt & pepper to taste. Remove from heat. 

Make Sauce

In a large pan, add in ¼ cup heavy cream and ¼ cup water over medium heat. Heat for 90 sec. then stir in remaining garlic.

Reduce heat to medium-low, and add 4oz parmesan cheese continuously stirring. Season to taste with salt & pepper. Continue stirring until cheese is fully melted. Once the cheese is fully melted and sauce is to desired thickness, turn off the heat. 

Add in Other Ingredients 

To the pan with the sauce, add in 3oz cooked peas, green beans, and cooked fettuccine. Stir until fully combined. Season with salt & pepper to taste. Serve immediately.
