Blueberry Muffins

Ingredients

  • ½ cup butter, softened

  • 1/2 cup sugar

  • 2 eggs

  • 1 tsp vanilla extract

  • 2 cups flour

  • ½ tsp kosher salt

  • 2 tsp baking powder

  • ½ cup milk

  • 1 cup blueberries, washed & drained

  • 1-2 tsp brown sugar

- Frozen blueberries will also work in place of fresh.

Total Time: 30-35 min

Cooking Steps

Preheat Oven

Preheat the oven to 375°F (190°C).

Mix Wet Ingredients

Cream ½ cup softened butter and ½ cup sugar until light and smooth in a bowl. 

Add 2 eggs, one at a time, into the creamed mixture. Also, mix in 1 tsp vanilla.

Mix Dry Ingredients

In a separate bowl, mix together 2 cups flour, ½ kosher salt and 2 tsp. baking powder until combined. 

Combine Wet & Dry Ingredients

Mix the dry ingredients with the wet ingredients, until just combined. Slowly add ½ cup milk into the mixture until combined.

Fold in Blueberries

Fold in 1 cup of blueberries. Be sure not to over mix.

Prep Muffins for Baking

Line a muffin tin with liners or nonstick cooking spray, and fill each cup evenly with batter. 

Evenly sprinkle 1-2 tsp brown sugar over the tops of the muffins.

Bake Muffins

Bake at 375°F (190°C) for about 20-25 minutes.

Remove muffins from tin and cool. Enjoy!
