Not-Your-Average Blackberry Cobbler

Some people argue that a cobbler must have a certain appearance, like having 4 perfectly rounded biscuits on top. However, this cobbler doesn’t follow the rules, as it looks different and tastes even better (in my opinion of course). If you have some extra blackberries or want to try out a new dessert, I suggest giving this recipe a go! Cook Time: 30-35 min.

Total Time: 40-45 min.

Ingredients

  • 1-- 6oz container of blackberries

  • 1 ½ cups self-rising flour

  • 1 stick of butter (8 Tbsps.)

  • 1 cup sugar

  • 1 tsp. vanilla

  • ½ cup milk

- I wouldn’t recommend using any number of berries amounting to over 6oz, as the cobbler will take much longer to cook, and the edges will crisp up long before the center will. Unless you want a Cap’n Crunch All berry cereal situation, I would suggest using less berries. (I know from experience :D)

- I recommend using a 9x9 glass pan, however, you may change the dimensions of the pan to fit your needs.

- This recipe calls for self-rising flour. If you only have all-purpose on hand, no worries! Check out my recipe here for how to make self-rising flour.

Cooking Steps

Preheat Oven

Preheat oven to 350 °F (180°C).

Melt Butter

Put the butter in a 9x9 baking dish and place in oven to melt.

Create Blackberry Mixture

Mix 1 cup sugar, 1 ½ cups self-rising flour, 1 tsp. vanilla, and ½ cup milk until moist and holds peaks.

Rinse and dry 6 oz. of blackberries.

Assemble Cobbler

Remove pan with melted butter and pour mixture over melted butter. Do not stir. Spoon fruit on top.

Bake for 30 to 35 min, until top is golden brown.

Serve

To serve, scoop cobbler onto a plate or into a bowl. Enjoy with a topping of whipped cream if desired.
