Farro with Mushrooms

Ingredients

  • 1 cup farro, rinsed

  • 3 cups water

  • 8 oz baby Bella mushrooms

  • 1 Tbsp olive oil

  • ½ tsp Italian seasoning

  • 2 ½ oz shredded Parmesan*

  • Salt & pepper, to taste

Cooking Steps

Cook Farro 

To a pot, 1 cup of farro and 3 cups of water and bring to a boil with a pinch of salt.

Once boiling, reduce heat to medium-high and let farro cook for 15-20 min., or until softened. If there is excess water, drain from the farro. 

Prep Mushrooms

Meanwhile, clean and dry 8oz of baby Bella mushrooms. Remove the stems and thinly slice the caps. 

Cook Mushrooms

To a skillet over medium heat, add 1 Tbsp olive oil. Next, add sliced mushrooms into the pan and saute, occasionally stirring, until mushrooms are browned and soft, about 4-5 min. Season with ½ tsp Italian seasoning and salt & pepper, to taste. 

Finish

Once the mushrooms and farro are both done cooking, mix the cooked farro into the pan with the mushrooms. Cook over medium heat for 1-2 min. Remove the pan from the heat and sprinkle over 2 ½ oz of shredded Parmesan cheese. Serve!
