Spiced White Bean Soup

Ingredients

  • 1 onion

  • 1 clove of garlic

  • 1 Tbsp. olive oil

  • 15oz (425g) cannellini beans, drained & rinsed

  • 2 ½ cups (600mL) vegetable broth 

  • ½ tsp paprika

  • ¼ tsp hot paprika or cayenne pepper 

  • ¼ tsp smoked paprika

  • Salt & pepper, to taste 

Cooking Steps

Prep

Roughly dice 1 onion and mince 1 clove of garlic. 

Cook Onion

To a large pot, add 1 Tbsp. of olive oil over medium heat. Add diced onion to the pot and cook for 3-4 min., or until the onion is translucent. Next, stir in minced garlic and cook for 30 sec., or until fragrant. 

Add Broth

To the pot, pour in 2 ½ cups (600mL) of vegetable broth. Bring to a boil and season with ½ tsp paprika, ¼ tsp hot paprika, and ¼ tsp smoked paprika. 

Add Beans

Once boiling, add 15oz (425g) of drained & rinsed cannellini beans. Bring to a boil once more. Season with salt & pepper to taste. 

Finish

When boiling, cover, and turn down the heat to low. Simmer for 10-12 min. Serve!
