Small-Batch Olive Oil Chocolate Chip Cookies

Ingredients

  • ½ cup flour

  • ¼ cup olive oil

  • 1 Tbsp sugar

  • 1 Tbsp brown sugar

  • ¼ tsp salt

  • ⅛ tsp baking soda

  • ½ tsp vanilla extract

  • 1 egg

  • ½ cup chocolate chips

Cooking Steps 

Mix Wet Ingredients

Preheat the oven to 350°F (180°C). To a mixing bowl, add in ¼ cup olive oil, ¼ tsp salt, 1 Tbsp sugar, and 1 Tbsp brown sugar. Mix until smooth. Then mix in 1 egg until smooth. 

Add Dry Ingredients

Mix in ½ cup all-purpose flour and ⅛ tsp baking soda until fully combined with no streaks of flour. Fold in ½ cup chocolate chips. 

Bake 

Using a spoon, drop the dough onto a lined cookie sheet, making sure to space the cookies about 2 or more inches (5 cm) apart. Note: The dough will be runny. Bake at 350°F (180°C) for 11-13 min., or until browned. Let them cool for 3-5 min., on the cookie sheet and then transfer to a cooling rack or immediately serve!
