Cucumber & Pepper Salad

Ingredients

  • 1 English cucumber

  • 1 bell pepper (red, orange, or yellow)

  • 1 red onion 

  • 1 Tbsp. olive oil

  • ½-1 Tbsp. red wine vinegar

  • Salt & pepper (to taste)

Steps

Prep

Roughly chop 1 English cucumber into half-moon pieces. Add to a large bowl. Roughly dice 1 bell pepper and 1 red onion. Put into large bowl.

Finish

To the veggies, drizzle 1 Tbsp. olive oil and ½-1 Tbsp. red wine vinegar (add vinegar to taste). Toss to coat and serve!
