Ingredients
150g or 5 oz overnight oats
1 egg
½ cup milk
1 cup flour
1 tsp baking powder
¾ tsp baking soda
¼ tsp salt
½ tsp vanilla extract
¼ tsp cinnamon
1 apple
Sugar, to your taste*
*Depending on the sweetness of your overnight oats, you may not need to add any additional sugar.
Cooking Steps
Prep
Finely dice 1 apple. Preheat the oven to 350°F (180°C). Line a 12-cup muffin pan with liners or grease.
Make Batter
In a large bowl, combine 150g or 5 oz overnight oats and 1 egg, mix until smooth. Then stir in ½ cup milk and mix until combined.
Next, to the wet ingredients, combine 1 cup flour, 1 tsp baking powder, ¾ tsp baking soda, ¼ tsp salt, ½ tsp vanilla extract, and ¼ tsp cinnamon. Mix until the batter is moist and no streaks of flour remain.
Finally, fold in the diced apple.
Bake
Evenly disperse the batter among the prepared muffin cups. Bake in the preheated oven for 15-18 min., or until a tester comes out clean. Remove and cool. Enjoy!
