Vegan Paella

Ingredients

  • 2 Tbsp. olive oil

  • 1 onion

  • 2 bell peppers

  • 15 ½ oz. (440g) butter beans

  • 2 cloves of garlic

  • ¼ tsp smoked paprika

  • ¼ tsp paprika

  • ¼ tsp cayenne pepper

  • ⅔ cup (150g) paella rice or short-grain rice

  • 100 mL white wine

  • 450 mL vegetable broth

  • Salt & pepper

Cooking Steps

Prep

Mince 2 cloves of garlic. Finely dice an onion. Cut 2 bell peppers into strips. Rinse and drain 15 ½ oz. butter beans. 

Cook Veggies

In a large deep-sided pan, heat 2 Tbsp. olive oil over medium heat. Add onion and cook for 5 min. Add the sliced peppers and cook until tender for 6 min. Add the garlic and butter beans. Cook for 1 min. more.

Cook Rice

Mix in all spices with the veggies. Add ⅔ cup (150g) paella rice, and stir for 2 min. 

Pour in 100 mL white wine and let simmer for 1 min. Next, pour in 450 mL of vegetable broth. Season to taste with salt & pepper. Turn heat to low and cook for about 25-30 min., or until the rice has absorbed the liquid. DO NOT cover or stir the rice when cooking. 

Finish

Remove the paella from the heat and stir. Serve!
